The Holiday Bikini – How to Make It

WHere is a simplified interpretation of a cocktail found on the seasonal cocktail list. It's a batch premix that is bursting with essence of the holiday season, which makes it ideal for a festive gathering. Save the extra syrup for breakfast cocktails, desserts, or to make more rounds of the drink.

Bikini Recipe

Yields 10 guests

For the Citrus Syrup (yields 750ml)

300ml fresh clementine juice
200ml fresh lemon juice
500g caster sugar

To make the Cocktail (produces 850ml, serving 10)

400ml premium vodka
100ml classic gin
150ml peach schnapps
200ml clementine cordial (from the recipe above)
A few cranberries, for garnish
Mandarin essential oil, for finishing

Method

Making the Syrup: Put all the ingredients into a saucepan, heat until it reaches a simmer, agitating to dissolve. After that, take off the stove allowing it to reach room temperature entirely. Transfer into an sterilised bottle, cap it and store chilled, it can be stored for around four weeks.

To make Premix: Pour all the liquids in a sizeable container, allow it to infuse for an hour, then pass it through preferably using muslin, to ensure it's fully clarified.

When ready to serve: Pour 85ml of the batch mix into your mixing glass filled with ice, and stir carefully for one minute until cold. Strain to a frosted cocktail glass or a similar vessel, decorate with a few cranberries and finish by giving it a brief mist of the essential oil above the glass.
